Hey Craig!
We were very fortunate to get one of the first S5's a few months ago and are VERY impressed with it. We wil be publishing a review later this week. Regarding the RAW speeds, we agree with you that the RAW function was so slow on the S3 that it was not useable in my opinion. We added a few Nikon D200's to our line up for TTL, autofocus jobs, and for the rare occasions that we needed RAW workflow in a DSLR. I think the D200 is terrific, but the S5 has even more to offer. The S5 is in the D200 body but that's where the similarity ends. The controls and color of the Fuji chip in the S5 is nothing short pf amazing. you can shoot RAW + a full sized- JPEG as fast as you like with the S5 - it's about a 2 second write time onto a Sandisk Extreme 3 CF card. The 7 shot buffer will permit you to jump on the camera in RAW mode. I tried to get it to bog down and could not in the studio, but did outside in continuos mode.
For folks with an S3, the S5 will give you faster RAW speeds, much better AF, a TTL system that actually works, and some new film sim modes that are rather impressive. My favorite new feature is the ability to shoot at ISO 1600 with only minimal noise and all the extended D range as in the lower ISO.
So, for my money, the S5 is great for the wedding / portrait crowd and is a trusty workhorse.
If you like, I can send you one of ours for a few days to test shoot? Just whistle.
